Spring is here and ramps have arrived at the Union Square Green­mar­ket. New York food­ies and chefs are obsessed with these del­ish greens also known as wild leeks. They taste fan­tas­tic… some­where between gar­lic, onions, chives, scal­lions, and leeks. They’re in sea­son for only a short time so you best get them while the getting’s good.

Greenmarket Roasted Chicken Soup

Soup 1

This chicken soup was incred­i­ble. Every­thing, exclud­ing the herbs, came from the Union Square Greenmarket. I started with a good look­ing chicken… not to be con­fused with dick chicken.

Sprin­kled with kosher salt.

Good Looking Chicken

An assort­ment of root veg­eta­bles from the green­mar­ket. I used cele­riac, rutabaga, car­rots, turnips, and parsnips.

The secret to “off-the-hook” panna cotta is using real whole milk but­ter­milk. Most NYC super­mar­kets only carry low­fat but­ter­milk. Snore. Panna cotta purists can find whole milk but­ter­milk at Ton­jes Farm Dairy’s stand Sat­ur­days at the Union Square green­mar­ket.
