Spring is here and ramps have arrived at the Union Square Greenmarket. New York foodies and chefs are obsessed with these delish greens also known as wild leeks. They taste fantastic… somewhere between garlic, onions, chives, scallions, and leeks. They’re in season for only a short time so you best get them while the getting’s good.

This chicken soup was incredible. Everything, excluding the herbs, came from the Union Square Greenmarket. I started with a good looking chicken… not to be confused with dick chicken.
Sprinkled with kosher salt.

An assortment of root vegetables from the greenmarket. I used celeriac, rutabaga, carrots, turnips, and parsnips.

The secret to “off-the-hook” panna cotta is using real whole milk buttermilk. Most NYC supermarkets only carry lowfat buttermilk. Snore. Panna cotta purists can find whole milk buttermilk at Tonjes Farm Dairy’s stand Saturdays at the Union Square greenmarket.
